Capacitive sensing relies on measuring changes in capacitance between electrodes caused by variations in the dielectric constant of the material between them. Water’s dielectric constant (~80) is far higher than air (~1). As water replaces air in the sensing zone, capacitance rises sharply, signaling the presence of liquid.
In water purifiers, this allows completely external mounting—no holes, no contamination risk, no moving parts.
